Emmer & Rye Hospitality Group Announces Barberry at San Antonio's Restored Sítio El Tropicano Hotel

A celebrated culinary powerhouse is preparing to make its next major mark on the San Antonio River Walk. Emmer & Rye Hospitality Group has revealed plans to launch Barberry, a premier dining concept located inside the historic Sítio El Tropicano hotel. The ambitious project is currently under construction amid a comprehensive, property-wide overhaul of the landmark riverfront destination.

Targeting an opening in mid- to late November, the arrival of Barberry will coincide with the broader grand reopening of the 64-year-old hospitality landmark. The new restaurant is poised to capitalize on the momentum of Emmer & Rye’s already stellar reputation across the state, bringing another high-profile dining experience to the city’s urban center.

The hospitality group is no stranger to navigating massive buildouts to achieve culinary excellence. Emmer & Rye has earned significant critical acclaim at San Antonio’s Pearl district, particularly within Pullman Market and at the Mediterranean concept Ladino. The group's established venues have already captured major Michelin Guide recognition, including stars for Pullman concepts Nicosi and Isidore, along with Michelin Bib Gourmand honors for both Ladino and Mezquite at Pullman.

Drawing its moniker from the hardy shrub known for producing tart, edible berries, Barberry has been designed to reflect a deep sense of regional identity. Culinary leaders behind the concept describe the venture as an expression of Texas Hill Country dining interpreted through the unique cultural and historical framework of the surrounding community.

Culinary operations will be directed by Evan Allumbaugh, a seasoned California chef serving as the hotel food and beverage director for Emmer & Rye. Working alongside Allumbaugh is Tavel Bristol-Joseph, the hospitality group’s chief operating officer and partner, who previously earned acclaim as the creative driver behind the Michelin-starred dessert laboratory Nicosi.

Central to Barberry’s identity is an uncompromising commitment to hyper-regional ingredient sourcing. The kitchen team has pledged that all land animals featured on the menu will originate 100 percent from Texas, while all seafood selections will be sourced exclusively from the waters of the Gulf of Mexico. These proteins will be complemented by market-driven seasonal produce harvested by agricultural producers across the greater San Antonio area.

Early previews of the kitchen's offerings showcase a sophisticated take on classic regional tastes. Menu items slated for debut include tender wagyu beef tartare, crispy chicken-fried quail, fresh crab claws, and an heirloom tomato salad alongside a vibrant Stetson chopped salad. The kitchen will also feature distinctive pasta craftsmanship, including a pillowy sweet corn raviole du Dauphiné.

The layout of the new establishment will accommodate 140 guests inside the hotel. Barberry plans to launch initial operations by serving daily breakfast and dinner, with plans underway to expand the schedule to include lunch service at a later date.

The restaurant's beverage offerings have been developed by leading industry veterans within the hospitality group. Wine director Alicia Schmidt is curating an extensive, tailored wine program to harmonize with the Hill Country menu, while Houston Eaves has designed the restaurant's signature craft cocktail offerings.

Barberry serves as the crown jewel of an expansive, multi-venue food and beverage program that Emmer & Rye is executing across the entire hotel footprint. In addition to the flagship restaurant, the hospitality team will operate a casual on-site coffee bar and cafe designed to accommodate day-to-day guest needs.

Outside the main dining room, the team is activating a dedicated outdoor pool bar with its own distinct food and drink offerings. The poolside space sits tucked behind the street-facing facade, situated on what is slated to be the largest hotel pool deck in San Antonio.

The hospitality group will also manage refreshments for the hotel’s 5,000-square-foot wellness spa facility, oversee all room service deliveries for hotel patrons, and provide exclusive culinary programming for members of the private Sítio Club.

The grand hospitality revitalization represents an extraordinary new chapter for a property deeply rooted in San Antonio’s mid-century history. Originally opened in 1962, the establishment made history as the very first hotel situated along the famed San Antonio River Walk, greeting visitors with its distinctive Vegas-deco styled El Tropicano signage.

Throughout its mid-century heyday, the riverside resort served as a high-profile destination for cultural icons and political figures, famously hosting President Lyndon B. Johnson, country music legend Dolly Parton, and the Rolling Stones. Over subsequent decades, however, the property slowly receded from the spotlight before finally shutting its doors in 2020.

The building is now experiencing a complete renaissance under the direction of development firm Trestle Studio. The ongoing floor-to-ceiling renovation covers all 315 guest rooms across the multi-story structure, setting the stage for Barberry and its accompanying hospitality venues to welcome guests later this year.
